Cookies for Nancy (Recipe Below)

Last summer, I had learned how to make these amazing peanut butter cookies. I had some extra time this week, so I baked some cookies and took some for Nancy*.

The reason why this treat is so popular is because the recipe is so incredibly simple. In fact, it requires only 4 ingredients. Moreover, last summer, I was baking with a friend who was gluten sensitive. It’s hard to believe it given the final product, but this treat doesn’t require any flour at all.

I brought some cookies for Nancy and her family. As Nancy bit into the first one, she was utterly delighted. She loved them, and I had a great deal of fun showing her the process of making them. Unfortunately, her family wasn’t there that day. However, I look forward to making the treats and sharing with them in the future. Like me, Nancy has a sweet tooth, so it was nice to see that she enjoyed the cookies.

The recipe is found below - it should take 20 - 30 minutes for this simple recipe.

Ingredients:

1 cup natural peanut butter

1 cup sugar

1 teaspoon pure vanilla extract

1 large egg, lightly beaten

Mix everything together before placing into preheated oven at 350 F. Place cookies unto baking tray to make 18. Bake until edges of cookies are golden (approximately 10 minutes)
